While most of you have been doing this under the name of Food Defense, this part of the Food Safety Modernization Act becomes effective this July for large companies. What does it mean? The answers will depend on your size and other factors like your membership in IBWA, if you have any military contracts and if you sell to any major retailers. Terms like Vulnerability Assessment and Mitigation Strategies will be discussed.

WORKSHOPS

What is CT Contact Time all about in Bottle Sanitation? (1 CEU)

Chris Dunn, DunnWorks

Some of you may have heard about the renewed interest the FDA has in demanding proof that your returnable bottles are being properly 'sanitized'. This discussion will center on the GMP requirements and how you can calculate what your washer does (including the excel sheet for your use)!

While most of you have been doing this under the name of Food Defense, this part of the

Food Safety Modernization Act becomes effective this July for large companies. What does it mean? What are you going to have to do to comply? The Answers will depend on your size and other factors like your memberships in IBWA, if you have any military contracts and if you sell to any major retailers. Terms like Vulnerability Assessment and Mitigation strategies will be discussed.

Be careful what you ask for: FSMA is Here! (1.5 CEUs)

Chris Dunn, DunnWorks

The deadline for implementing Preventative Controls has now passed. Today's session will recap recent "Guidance Documents" from the FDA and review what you need to have in place to be ready.

We'll touch on your Recall Plan (and where the FDA is now focusing after the Romaine Lettuce recall of Q42018.)

Next, we'll look at what you should have for your Supplier Assurance program including Supply Chain Preventative Controls if you purchase any products from co-packers. Then we'll look at the approach inspectors are likely to take in asking you for documentation on any Process Preventative Controls (aka CCP's) you have including the required validation plus what you will need to show to prove that you have an adequate sanitation and preventative maintenance program.

On the topic of training, we'll review what is available for free and an online system some bottlers are using to help with content and documentation.

We'll close with a recommendation for how you can organize all your Food Safety Plan & Documents into two notebooks to help you get through inspections faster and easier.
